Summer Courgette Cake

When you think about summer cakes, or cakes in general, courgette is probably not an ingredient that springs to mind. The Summer Courgette Cake is one of this surprising combinations of savory ingredients and cocoa that will astonish you with its lightness and subtle sweetness.  The cake takes almost no time to prepare. Once ready, it can be served with a scoop of ice-cream, frosting of your choice or simply dusted with some powdered sugar.

Ingredients

  • 2 cups grated courgette (strain off the excess liquid)
  • 2 1/4 cups wholemeal flour or plain flour
  • 4 eggs
  • 2/3 cup sunflower oil
  • 1 teaspoon baking soda
  • 2 vanilla pods (scrape out the seeds and use just these) or a sachet of vanilla sugar
  • 1 cup sugar
  • 1 tsp cinnamon
  • a handful of crushed walnuts
  • a handful of almond flakes
  • a handful of dried apricots, chopped
  • 2 tbsp natural cocoa

Instructions

  1. Preheat oven to 180 C.
  2. Mix all the cake ingredients thoroughly in a big bowl.
  3. Transfer the batter to a greased baking tray and bake for about 40 minutes (test by sticking a skewer through and removing, the cake is done if nothing sticks to it).
  4. Sprinkle with icing sugar and serve (maybe with a scoop of vanilla ice cream)
  5. And voilà, it's as simple as that, a light and delicious summer cake!
