This July, temperature in Iraq reached 50 degrees Celsius. Leaving the comfort of an air-conditioned room was an adventure in itself. Despite the weather being nothing like that in Poland, the taste of some long-forgotten flavors took me back home for a while. Polish potato dumplings stuffed with juicy plums are an unforgettable part of my childhood. I hadn’t eaten them in more than eight years and this weekend, Mike and I made them for the first time in both of our lives, although it was a less surprising “first” in his case! Back home, my grandpa used to pick plums from a communal plum tree which grew in front of our house – all the neighbours would harvest the fruits of the tree but there was plenty to go around. Together with my grandma, I would spend hours opening each fruit to check if any plump little worms had beaten us to the treasure. Afterwards, my grandma made dumplings stuffed with the best plums. This summer, as I was melting in the kitchen in Iraq while cooking my childhood treat, it reminded me of an important truth: no matter where, no matter when, home is always on your plate.

Polish Potato Dumplings (Knedle)

Polish Potato Dumplings stuffed with fresh plums from my Grandma's recipe.

Ingredients

  • 250 g boiled potatoes, peeled
  • 60 g all-purpose flour
  • A pinch of salt
  • 6 plums
  • Garnish
  • 1 tbsp butter + 1 tbsp breadcrumbs + sugar
  • 2 tbsp fresh yoghurt + sugar

Instructions

  1. Mash potatoes, add flour, salt and knead until the dough it smooth.
  2. Divide the dough in half, and then each piece in half again leaving 4 pieces. Finally divide each piece into 3 equal pieces, so that you are now left with 12 small pieces.
  3. Flatten each piece with your fingers and mould into round shapes, large enough to fit half plums.
  4. Place a half of a plum in the middle of each and stick the dough’s ends together to form a ball.
  5. Transfer to boiling water and boil for 8 minutes.
  6. To garnish: Melt butter, add breadcrumbs and mix. Garnish dumplings with the mixture, before finishing by sprinkling with sugar.
