Kale-Sweet Potato Soup


Guess what. Yesterday, I got kale and chocolate tomatoes for free from We Farm, our local organic veggie shop. (!!!)
– Why would you give it for free – I asked the sales lady in astonishment.
– Because people in Jordan don’t know these products, so we’re trying to promote them.

Conclusion: Rush to We Farm in Weibdeh to buy some of their tasty products (home-made peanut butter, fresh juice, chia seeds and local veggies) and get your portion of fresh kale to make this delicious kale-sweet potato soup.

  • 1.5 l. vegetable stock
  • 250 g kale, shredded (big chunks)
  • 1 big sweet potato (around 100g)
  • 7 cherry or chocolate tomatoes (100 g)
  • 3 tbsp. tomato puree
  • 1/2 tsp chilli flakes (feel free to use less)
  • 1 can fava beans (260 g drained)
  • 3 garlic cloves


  1. Heat the stock in a large pot over medium heat. Add garlic, sweet potatoes, tomato puree and cook for about 15 minutes
  2. After this time, add shredded kale, cherry tomatoes, chilli flakes and fava beans. Cook for another 10 minutes on medium heat.
  3. Serve hot.


You can garnish the soup with chopped parsley, thyme or maybe some shredded cheese?
