As the name suggests, this cake was traditionally made with porter (which is a lighter version of a stout) but it can equally be made with stout like Guinness or Murphy’s (if you’re in Cork) or indeed any beer will do but a stout or a dark beer will give a richer dark colour to your cake.

Irish Porter Cake

450 gr flour
230 gr salted butter
230 gr brown sugar
500 gr sultanas
500 gr raisins
400 ml stout or beer
2 eggs, beaten
1 tbsp allspice
½ tsp baking soda
Mix together the brown sugar and butter.
Mix in eggs, add the all spice and baking soda and then add in the flour gradually, mixing while adding.
Mix in dry fruit and stout or beer.
Spread mixture in a greased 25 cm diameter tin (or a tin lined with baking paper) and cook at for 1 ½ hours at 140 degrees Celsius.
